The quality of an Acai Berry is determined by it’s thickness, creaminess, rich purple colour, texture & taste!

This is determined by the solids % i.e the amount of acai berry in your formulation.

  1. Fine Min 8% Solids
  2. Medium Min 11% Solids
  3. Speciale Min 14% Solids

Colour

Should always be a rich and bright purple.

Never should Acai be shades of brown or discoloured. This is usually a sign of an inferior quality, lesser grade  or oxidised product.

Texture

The buzz word “texture”!

Acai can be slightly but not overly grainy. If your Acai is too grainy chances are you are buying a lower quality product.

Check your product is consistently creamy, thick & smooth in texture.

Fine & Medium Acai have less solids & more water added. This means less fruit & therefore less creamy.

Taste

Acai should taste slightly tart with an earthy underlying tone!

Most food service Acai is sweetened. HOWEVER, Acai should NOT taste overly sweet! (There are plenty of garnish options to sweeten it!)

If your Acai is overly sweet, chances are you are buying a lower grade Acai.
